Answer

Praise be to Allah, the Lord of the World; and may His blessings and peace be upon our Prophet Muhammad and upon all his Family and Companions.

Know, dear questioner, the Hijab required in Islam does not have any distinctive compulsory colour that should be considered for every occasion.
The Hijab requires a woman to wear clothes loose enough, so that her body's shape and skin colour are not exposed. Also, they should not be decorated so as to attract attention. There is no any particular colour restrictions placed on it. All kinds of colours are permissible with the exception of the colours that attract men and tempt them.
As for the matter of vitamin deficiency in Saudi Arabia, you should consult the specialists in that field, i.e. the medical doctors since it is related to their specialization and they are 'Ahl Zikr' in the field. Allah Says (interpretation of meaning): {…So ask of those who are Ahl al-Zikr (Those who possess knowledge), if you know not.} [16:43].
Finally, we draw your attention that submitting to Allah's Commands is a duty of the Muslim. It is compulsory to believe that Allah's words are true, His promise is unchangeable, all good lies in His Commands, and that all evil is in breaking His prohibitions.
Allah knows best.
